Ingredients
- 4 Delibreads pita breads
- 400 g minced beef
- 1/2 onion, grated
- 1 garlic clove, chopped
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- Chopped fresh parsley
- 2 tomatoes
- 1 red onion
- Mixed salad leaves
- 150 g Greek yogurt
- Juice of 1/2 lemon
- Hot sauce (optional)
- Extra virgin olive oil
- Salt and pepper
Method
- In a bowl, mix the minced beef with the grated onion, garlic, cumin, paprika, a tablespoon of chopped parsley, salt and pepper. Shape into 8 thin, elongated patties.
- Heat a griddle or frying pan with a little extra virgin olive oil over medium-high heat and cook the koftas for 3-4 minutes per side, until browned and cooked through.
- Meanwhile, mix the Greek yogurt with the lemon juice and a pinch of salt. Slice the tomatoes and cut the red onion into thin rings.
- Warm the pita breads on the griddle for 1 minute per side so they become pliable.
- Cut the koftas into strips. Top each pita with lettuce, tomato, red onion and the meat, add the yogurt sauce, a few drops of hot sauce if you like and chopped parsley, then fold the pita in half.
