Spooky pumpkin cookies

A Halloween recipe to make with children: circles of mini wheat tortillas filled with pumpkin purée, brown sugar, cinnamon and ginger. Half of the circles get eyes and a mouth cut out, like a carved pumpkin, and go on top as lids. They bake at 180 °C until golden.

Ingredients

  • 10 mini wheat tortillas
  • 1 cup cooked pumpkin purée
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger (optional)
  • 1 pinch of salt
  • 1 beaten egg (for brushing)
  • Melted butter or vegetable oil (optional)

Method

  1. Mix the pumpkin purée with the brown sugar, cinnamon, ginger and salt. Set aside.
  2. Use a round cutter (or a wide glass) to cut circles out of the tortillas. You need an even number to make the "lids".
  3. Cut eyes and a mouth into half of the circles with a knife, like carved pumpkins.
  4. Place a teaspoon of filling in the centre of each base circle. Cover with a "face" circle and press the edges with a fork to seal. Brush with beaten egg or melted butter.
  5. Bake at 180 °C for 8-10 minutes or until golden.
